Zesty Carrot Cakes with Cashew Coconut Cream. These were given the thumbs up from husband and my little on today. My husband loves fruit cake so asked me to make a healthier version and he loves this one. You can make it a boozy fruit cake by adding orange liquor or for an alcohol free version use extra freshly squeezed orange juice.
